Baked Ricotta Mushrooms

Diabetes Food Recipes

People with diabetes need special food to maintain health. This recipes good for diabetics.

Cooking Time : 15 minutes Preparation Time : 15 minutes

 

Ingredients:

  1. 10 large mushrooms, steams removed
  2. 1 tablespoon grated parmesan cheese
  3. 1 tablespoon dried breadcrumbs

Ricotta and herb filling

  1.  1/2 reduces-fat ricotta cheese
  2. 3 sun-dried tomato, soaked in warm water until soft, chopped
  3. 1 tablespoon finely decid red onion
  4. 1 tablespoon chooped fresh basil
  5. 1 tablespoon snipped fresh chives
  6. 1 teaspoon lemon juice
  7. freshly ground black pepper

Directions:

  • Preheat oven  to 180 derajat celcius/360 derajat F/gas 4. Line a baking tray with nonstick baking paper. Set aside.
  • To make filling, place ricotta cheese, tomato, onion, basil, chives, lemon juice and black pepper to taste ini a bowl (a). Mix to combine.
  • Spoon filling inti mushrooms (b). Place on prepared baking tray. Combine parmesan cheese and breadcrumbs. Spreinkle over mushrooms (c). Bake for 10-15 minutes or until filling is  set and top golden.

Calories : 32  Carbohydrate : 3 g Fat : 0.6 g Sodium : 48 mg Fiber : 0.3 g
